Ingredients

(Serves 4)

  • 6-8 eggs
  • 2 sweet potatoes, cubed and roasted (great if you have leftovers from another dish)
  • 100g frozen peas
  • 150g feta cheese
  • 2-3 portobello mushrooms
  • Large handful of spinach
  • Seasoning
Method
  1. Peel, cube and roast the sweet potato  – it’s great if you have leftovers from another dish, but otherwise chop small and roast for about 20 minutes
  2. Chop and gently fry the mushrooms in a little butter, coconut oil or cold-pressed olive oil
  3. Slice the feta into cubes and chop the spinach
  4. Melt a little butter, coconut oil or cold-pressed olive oil into a frying pan, then add the sweet potato peas, feta, mushrooms and spinach, and space everything out evenly
  5. Whisk the eggs with some seasoning and pour over the feta and vegetables, then cook over a gentle heat until it seems semi-cooked – you may notice the sides starting to come away and browning
  6. Place under a grill until it’s cooked through

You can eat this cold or hot, with a salad or on its own. And then enjoy the rest of the day knowing your cells have everything they need for optimum vitality. This really is the best frittata recipe!
