This is the best frittata recipe you’ll make, not just because it’s delicious, but also because it really is energising. It contains a key group of nutrients you need for energy production.

Best frittata recipe for energy

The best frittata recipe for energy needs to contain Vitamins B1, B2, B3 and B5 together with magnesium, CoQ10, L-carnitine and alpha-lipoic acid. These are all key nutrients required to harness the energy from food and convert it into molecules of ATP, your own little energy batteries.

Eggs and feta provide you with vitamins B12, B2 and B6, L-carnitine and CoQ10, so we’re off to a great start there. Sweet potato   is a great source of vitamin B5, while peas contain vitamin B1 and portobello mushrooms are a great vegetarian source of vitamin B3. Spinach provides folate, magnesium and alpha lipoic acid. So that’s a recipe for ATP production right there.

(Serves 4)

  • 6-8 eggs
  • 2 sweet potatoes, cubed and roasted (great if you have leftovers from another dish)
  • 100g frozen peas
  • 150g feta cheese
  • 2-3 portobello mushrooms
  • Large handful of spinach
  • Seasoning
  1. Peel, cube and roast the sweet potato  – it’s great if you have leftovers from another dish, but otherwise chop small and roast for about 20 minutes
  2. Chop and gently fry the mushrooms in a little butter, coconut oil or cold-pressed olive oil
  3. Slice the feta into cubes and chop the spinach
  4. Melt a little butter, coconut oil or cold-pressed olive oil into a frying pan, then add the sweet potato peas, feta, mushrooms and spinach, and space everything out evenly
  5. Whisk the eggs with some seasoning and pour over the feta and vegetables, then cook over a gentle heat until it seems semi-cooked – you may notice the sides starting to come away and browning
  6. Place under a grill until it’s cooked through

You can eat this cold or hot, with a salad or on its own. And then enjoy the rest of the day knowing your cells have everything they need for optimum vitality. This really is the best frittata recipe!
